Sorn is a Bangkok restaurant with its centre of gravity in southern Thailand. Before opening it, Supaksorn “Ice” Jongsiri travelled through all fourteen southern provinces, learning from farmers, fishers, foragers and long-established local kitchens. That fieldwork shapes a menu built on direct sourcing, stone-ground pastes, charcoal, clay pots and traditional rice cookery. Refinement does not mean muting the region’s heat or perfume; the cooking aims to preserve intensity while giving each course formal clarity. The restored villa and trained service team provide context, but the restaurant’s claim rests on flavour, memory and a living network of southern producers.
