Gaa is Garima Arora's sustained inquiry into what Indian cooking can become when its techniques meet the produce and climate of Thailand. Opened in Bangkok in 2017, the restaurant rejects a catalogue of familiar dishes in favour of a composed tasting sequence built from grilling, fermenting, pickling, pounding and close attention to spice. Thai ingredients are not used to decorate an Indian idea; they alter the idea itself. The move into a traditional house gave the experience a more legible sense of place, while Arora's research platform and fieldwork have made regional Indian food knowledge part of a wider professional exchange. The result is personal, technically controlled and consequential beyond the room.
Indian methods of heat, fermentation, spice and preservation provide the menu's grammar, allowing Thai produce to change the cooking without making it culturally indistinct.
