The current Octavo menu moves through around fifteen passages, using rice, seafood, salting, smoke, local craft and tightly controlled visual composition as parts of one argument about territory and beauty. The kitchen's depth is not confined to its founder: Juanfra Valiente has worked alongside Dacosta for fifteen years, with Francesca Baccon leading the room and José Antonio Navarrete the wine programme. Recent complete reporting confirms that the menu remains active, with substantial annual replacement rather than a static retrospective. Its influence on regional identity, technique and the development of younger cooks gives the restaurant consequence at the highest level.
Rice, the Mediterranean, preservation and Valencian materials are organised into a recognisable language rather than used as isolated references to place.
