Orfali Bros makes migration and border-crossing taste specific. Mohamad’s savoury cooking and Wassim and Omar’s pastry work draw on Aleppo and the surrounding Assyrian, Armenian, Kurdish and Turkish food worlds while speaking in the multicultural present tense of Dubai. Dishes such as Eat H and the brothers’ shish barak are persuasive because technique clarifies memory rather than smoothing it into generic fusion. The three brothers remain the authors, but the January 2026 reopening created a materially new tasting-led restaurant experience. Selected signatures provide continuity of vocabulary, not three completed years of the current proposition.
