Steirereck makes Austrian ingredients feel contemporary without detaching them from their agricultural and domestic origins. Heinz Reitbauer and head chef Michael Bauböck work with freshwater fish, roots, herbs, grains, offal and dairy, building light but complex plates in the mirrored pavilion of Vienna’s Stadtpark. Birgit Reitbauer’s hospitality, the bread and cheese services and René Antrag’s cellar give the room an identity beyond the tasting menu. The family’s network extends to the Styrian farm at Pogusch, linking rural knowledge with a metropolitan restaurant. Its recent work justifies reconsideration at the highest restaurant records level.
The kitchen gives regional vegetables, freshwater fish, grains, offal and dairy the same technical attention often reserved for imported luxury products, creating a distinctly Austrian vocabulary.
