Schloss Schauenstein turns a remote Graubünden castle into a complete expression of place. Andreas Caminada and Marcel Skibba work with mountain produce, a kitchen garden, preservation and an exact modern vocabulary, but the restaurant's influence extends beyond the plate. Its bakery, gardens, training network and wider craft ecosystem show how a destination restaurant can strengthen the culture around it rather than merely importing luxury into a rural setting. More than two decades of continuous authorship and a carefully renewed house make the journey itself part of the proposition.
Ingredients, preservation and seasonality are organised around Graubünden rather than around a generic international tasting-menu template. The cooking remains inseparable from its valley setting.
