Piazza Duomo makes the garden a source of composition rather than a sourcing footnote. Enrico Crippa's menus move between the agricultural culture of the Langhe, an unusually deep study of leaves and vegetables, and the region's wine and truffle traditions. A three-hectare growing programme gives the kitchen access to hundreds of varieties, but the achievement lies in turning that abundance into plates with clear structure and rhythm. Since 2005, Crippa has developed a language whose colour and apparent lightness conceal exacting control of bitterness, acidity, temperature and texture.
Hundreds of cultivated varieties give the kitchen a vocabulary unavailable through ordinary purchasing. Growing, harvesting and menu development function as one continuous process.
Leaves, herbs and vegetables determine the architecture of major courses. They are used for bitterness, perfume, texture and narrative rather than as signs of restraint.
Wine, truffles and the agricultural culture of the Langhe remain legible, yet the restaurant avoids reducing the region to familiar luxury ingredients.
