Mirazur is inseparable from Menton: Mediterranean light, the meeting of France and Italy, and produce drawn from a network of gardens all shape Mauro Colagreco’s cooking. Its present structure follows four plant-led universes—roots, leaves, flowers and fruit—selected through a biodynamic calendar rather than a fixed sequence of signatures. That framework is more than a theme; it gives the kitchen a disciplined way to let the day’s harvest determine flavour, temperature and rhythm. Two decades of reinvention, a serious biodiversity programme and a dining room anchored to sea and hillside make this one of the group’s most complete culinary propositions.
The four-universe menu system translates the restaurant’s own gardens and daily growing conditions into a coherent culinary structure rather than treating seasonality as decoration.
