Maaemo uses a long menu to make Norway feel specific rather than merely Nordic. Esben Holmboe Bang’s strongest dishes connect wild and farmed ingredients to preservation, smoke, ember and the hard rhythms of a northern growing season, while the room’s scale concentrates attention on every transition. The cuisine has become part of how contemporary Norwegian food is understood abroad and by the country’s own ambitious kitchens. A 2026 ownership change upstream from one shareholder is material governance context, but current reporting explicitly preserves Bang’s culinary control.
