Jan Hartwig begins with regional products, seasonality and recognisable memories, then subjects them to exact classical technique and controlled modern intensity. The current menu can be taken in five or seven courses, with daily signatures available as additions, so the restaurant must sustain its identity across more than one fixed sequence. Hartwig opened this independent Munich dining room in 2022 after a long record at the highest level. Three complete years of operation now show that the new institution is not carried by anticipation: its sauces, product judgement and distinctly German culinary vocabulary have established authority in their own right.
Familiar references are rebuilt through reduction, fermentation and exact sauce work, preserving emotional clarity while giving the cuisine a contemporary voice.
Complex constructions remain disciplined around the principal product, with seasoning, texture and temperature carrying more weight than visual effect.
The independent restaurant has completed the continuity period under the chef who founded it, supported by a longer record of sustained authorship and team leadership.
