Frantzén turns a Stockholm townhouse into a controlled progression rather than a conventional dining room. Twenty-three guests move through three floors, from opening bites to the kitchen-facing main service and a final lounge sequence. Björn Frantzén’s cooking draws together Nordic produce, Japanese precision, French sauce work and live fire, favouring richness and clarity over ascetic minimalism. The format is immersive but unusually legible: the guest can see the cooking, understand the transitions and recognise a consistent flavour structure. Its international expansion raises a necessary question, yet the Stockholm flagship retains a specific scale and physical identity of its own.
The 23-seat, three-floor progression makes architecture part of pacing, with each movement assigned a culinary purpose rather than serving as decorative theatre.
