De Librije enters its next chapter without treating continuity as imitation. Nelson Tanate has worked inside the kitchen since 2010 and now carries forward a cuisine built on the landscape around Zwolle, where freshwater fish, vegetables, preservation and precise acidity give local produce unusual intensity. The current menu places founding dishes beside recent work, making the restaurant's history visible while allowing a new generation to edit, refine and add to it. That combination of regional conviction, technical fluency and an unusually well-prepared succession gives the house continuing consequence beyond its own dining room.
Local fish, vegetables, smoke, fermentation and bright acidity are not decorative references. Together they form a recognisable culinary grammar that has shaped how contemporary Dutch cooking presents its landscape.
Nelson Tanate joined the kitchen in 2010 and developed inside the house before taking daily culinary leadership. The transition therefore preserves accumulated craft while giving the current team clear authorship.
The menu dates enduring dishes from 1993, 2004 and 2020 alongside work introduced in 2023. Guests can read continuity and renewal in the same sequence rather than encountering a static retrospective.
The assessment verifies present operation, menu structure, named leadership, long kitchen continuity and the documented succession. It does not present the late founder as the current chef and does not claim an unannounced visit or direct observation of a particular service.
